ABSTRACT China's growing demand for farmed salmon is apparent, with the country importing 190 thousand tonnes valued at over $1.12 billion in 2023. In response, Chinese government allowed rainbow trout to be labelled and sold as starting 2018, bridging gap between domestically produced imported Atlantic salmon. This study aimed explore how country‐of‐origin information influences consumers' sensory perceptions willingness pay (WTP) Using a within‐subject design two evaluation rounds (blind informed) we combined hedonic liking where consumers rated three samples (from Norway, Chile, China) discrete choice experiment. The results indicated that under blind taste test, found no significant difference preference domestic from Norway Chile. However, when informed of product origins, consumer preferences shifted favor Norwegian Chilean Furthermore, WTP was unaffected by production unless provenance disclosed, which point origin significantly influenced their preferences.
