ABSTRACT Current diets in China and worldwide are neither healthy nor sustainable. This paper addresses this challenge focusing on China, which has experienced a rapid dietary transition recent decades. We investigate how can improve both health environmental outcomes by adopting sustainable through literature review food system modeling exercise. further analyze policy interventions, including supply‐ consumer‐side strategies, promote the toward such diets. The findings provide valuable lessons for other countries facing comparable challenges.

Purpose Food production and consumption increasingly contribute to environmental health-related concerns leading consumers adopt new eating behaviors which further align with their values. This study aims identify how social internal factors influence consumers’ self-expressive benefits perceptions of response efficacy resulting in intentions toward plant-based food decisions. Design/methodology/approach Stimulus-organism-response (SOR) theory, signaling theory protection motivation (PMT) provided a theoretical framework for the conceptual model. A total 627 responses were collected via questionnaire analyzed using covariance-based structural equation modeling. Findings The results revealed that (social media peer influence) (environmental, animal welfare health concerns) had an effect on efficacy. Of above only concern did not while rest significant effect. Both positively influenced purchase food. Practical implications present findings offer valuable insights restaurant operators aiming enhance business by offering options. Given impact efficacy, should prioritize communication potential former customers through platforms. Originality/value enriches understanding motivations underlying adoption diets integrating from SOR, Signaling PMT theories, thereby providing both practice relating dietary behavior.
