Antioxidants help prevent signs of aging and skin tone inequalities by protecting our from free radicals. High tyrosinase inhibition has a whitening effect on the skin, while collagenase an anti-sagging skin. Antioxidant activity tyrosinase/collagenase enzyme capacities have mutually supporting effects. The aim this study was to determine antioxidant activities, inhibitory potentials ethanol extracts two medicinal plants Turkey (Smyrnium rotundifolium Euphorbia virgata). In study, 6 different reference substances their chemical contents were investigated. Myricetin, quercetin kaempferol observed in S. extract, E. virgata extract. According capacity results measured both analyses; (IC50 DPPH•: 4.9±0.15 µg/mL, IC50 ABTS•+: 4.3±0.2 µg/mL) 4.6±0.11 4.1±0.13 similar each other. The formulation of food products is a very important part achieving safety and security through the provision healthy nutritious products. Success requires proper characterization basic components. Therefore, this study aimed to evaluate nutritional parameters some spices soumbala for formulating soumbala-based seasoning rich in bioactive compounds. Six (onion, parsley, anise, chili, black pepper, guinea pepper) were used study. Physicochemical biochemical evaluated using standard methods. Results showed that acidity ranged from 1.22%-4.26% pepper Parsley respectively. pH onion was most acidic (5.73). Soumbala slightly (7.21). dry matter content 86.44%-94.34% green aniseed, richer protein (35.27%) anise had lowest (10.54%). lipids, more energetic, while carbohydrates.
