Taiping Houkui (TPHK) is prevalent green tea in China, its flavor quality significantly influenced by different production regions. However, the key compounds responsible for these discrepancies remain unclearly. Here, TPHK samples were produced from fresh leaves of 'Shidacha 2' cultivar planted 14 distinct In samples, a total 33 non-volatile identified and quantified. Partial least-squares discriminant analysis (PLS-DA) reveal that theanine glutamate main umami compounds, caffeine imparted with bitterness, which collectively contributed to variation taste across Furthermore, profiles 51 volatile determined, integrated PLS-DA odor activity values volatiles indicated linalool (165.7–888.5) geraniol (11.9–141.4) affecting floral aroma among Our findings revealed critical effect regions on TPHK.

To overcome the time-consuming off-site limitations in conventional pesticide detection, this contribution presents an situ quantitative analysis detection strategy for pesticides on leaf surfaces using matrix-assisted laser desorption/ionization time-of-flight mass spectrometry imaging technology. Taking fungicide metrafenone as a representative, we initially screened seven commonly used matrices, and identifying α-cyano-4-hydroxycinnamic acid most effective one positive mode. Subsequently, coating matrix sublimation spraying method resulted highest intensity. The optimal combination of operation parameters were established with step size 30 μm × μm, diameter 75 energy 4.01 μJ/pulse.
