Allium species have great potential in the production of functional food via selenium biofortification. This review is devoted to specificity plant biofortification with Se, including genetic peculiarities, effect chemical form microelement, methods supply, sulfur and AMF effects, hormonal regulation. The biosynthesis methylated Se amino acids beneficial treatment on secondary metabolite accumulation yield are discussed. Special attention paid foods based plants enriched different ways: bread leek leaf powder, microgreens seedlings, ‘Black garlic’ biofortified Se. Further focus provided high variability crop quality under supply governed by factors environmental stresses, need for growth technology optimization obtain predicted nutritional characteristics derived product anti-carcinogenic activity.
