Abstract Objectives This work aimed to investigate and compare the physicochemical properties bacterial diversity of traditionally pickled mustard tuber from different regions in China. Materials Methods Pickles were obtained Ningbo (NB), Nei Mongol (NMG), Harbin (HEB). The pH was monitored by a meter. Titratable acidity salinity determined via titrimetric analysis. Nitrite content measured using N-(1-naphthyl)-ethylenediamine dihydrochloride spectrophotometric method. Organic acids detected liquid chromatography–tandem mass spectrometry (LC-MS/MS). Bacterial conducted through Illumina high-throughput sequencing platform. Results There significant differences various locations, with NB pickles having highest pH, salinity, nitrite lowest titratable acidity. Importantly, higher levels had relatively lower contents. A total 63 organic detected, lactic acid succinic being most prevalent. Moreover, compositions NMG HEB samples more similar than those pickles. Additionally, bioinformatic analysis revealed that Firmicutes Proteobacteria predominant phyla all samples. Among these, Lactobacillus major genus. abundant bacteria found Further correlation strong between community 11 internal parameters. Conclusions study could contribute better understanding characteristics locations.
