Objectives: Food insecurity among college students, combined with limited nutrition knowledge and barriers to healthy eating, significantly impacts diet quality fruit vegetable intake. Efforts address these issues are further complicated by the challenges of accurately efficiently collecting dietary data in research settings. This study aimed explore relationship between fruit/vegetable intake using skin, plasma, carotenoid levels as biomarkers. Methods: Undergraduate graduate students aged 18 years older (n = 166) from a California public university were recruited. The sample was predominately female 133, 80%), 30 males (18%) three individuals (2%) identifying non-binary. security assessed USDA’s 10-item Adult Security Survey Module through validated questionnaire. Background/Objective: Food insecurity remains a significant public health concern that negatively impacts college students’ academic performance and health. One in three students experiences inconsistent access to food, known as food insecurity, which has attracted research interest. This study examined the effectiveness of 10-item United States Department Agriculture Security Scale Module (USDA-FSSM) accurately effectively measuring security among students. Methods: A mixed-methods approach was utilized assess qualitative individual cognitive interviews survey quantitative data. An online used collect demographic data status from 462 recruited universities States. Food pantries are an integral part of the food security safety net and were designed to distribute emergency alleviate short-term hunger. Given many rely on assistance long-term, may no longer meet nutritional needs typical pantry user. Less is known about extent college students use campus whether they seek ongoing support. A comprehensive analysis use, including reach, awareness, student satisfaction was conducted using a cross-sectional survey, observational data from logs collected August 2020 May 2022. During first year operation, 20.6% aware pantry, 3.1% reached, high. About half users visited once, while 15.4% 8 or more times during academic year. On average, that had larger span (6.5 months), frequently (2 weeks between visits), likely be graduate older. While most used in short-term, chronic increased 1 2. This suggests need growing additional policies programs warranted support with needs.
