Food
safety
is
directly
related
to
human
health
and
has
attracted
intense
attention
all
over
the
world.
Surface-enhanced
Raman
scattering
(SERS),
as
a
rapid
selective
technique,
been
widely
applied
in
monitoring
food
safety.
SERS
substrates,
an
essential
factor
for
sensing
design,
greatly
influence
analytical
performance.
Currently,
nanostructure-based
substrates
have
garnered
significant
interest
due
their
excellent
merits
improving
sensitivity,
specificity,
stability,
holding
great
potential
accurate
of
contaminants
complex
matrices.
This
review
summarizes
fundamentals
spectroscopy
used
nanostructures
designing
platform,
including
precious
metal
nanoparticles,
metal-organic
frameworks,
polymers,
semiconductors.
Moreover,
it
introduces
mechanisms
applications
enhancing
signals
hazardous
substances,
such
foodborne
bacteria,
pesticide
veterinary
drug
residues,
additives,
illegal
adulterants,
packaging
material
contamination.
Finally,
with
continuous
progress
nanostructure
technology
improvement
technology,
its
application
prospect
testing
will
be
broader.
