In this paper, purple cabbage was used as raw material for ultrasonic-assisted extraction of anthocyanin with deep eutectic solvent. The effects solvent type, solid–liquid ratio, moisture, temperature, and time on the yield from were investigated by single factor test, feasibility method verified standard addition recovery test. test results showed that optimal could be obtained when DES-5 (choline chloride/1, 2-propylene glycol/water) is solvent, ratio 1:32, moisture 50%, temperature 50 °C, 80 min. Under these conditions, extract reached 21.6%, rates 85.62–87.75%. Therefore, DES a promising environmentally friendly extracting anthocyanins instead organic extraction.
