The golden needle mushroom (Flammulina velutiper) is one of the most productive mushrooms in world. However, F. velutiper experiences continuous quality degradation terms changes color and textural characteristics, loss moisture, nutrition flavor, increased microbial populations due to its high respiratory activity during postharvest phase. Postharvest preservation techniques, including physical, chemical biological methods, play a vital role maintaining extending shelf life mushrooms. Pleurotus eryngii (PE) has been sought after for its various health benefits and high content of phenolic compounds. This study explored the feasibility steam explosion (SE)-assisted extraction polysaccharides with antioxidant capacities from PE. An orthogonal experimental design (OED) was used to optimize SE-assisted The influence optimized on physicochemical properties PE determined by scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FTIR), monosaccharide compositional analysis capacity assays. Under optimal SE conditions, increased polysaccharide yield 138% compared without SE-assistance. In addition, SEM demonstrated that markedly altered spatial structure (PEP), revealed this pretreatment significantly proportions some monosaccharides, such as glucose, rhamnose arabinose, in isolated PEP. FTIR spectra indicated no change major chemical functional groups PEP extracted had free radical scavenging capacities. conclusion, appears be a novel technology, which increases yields efficiency can increase biological activity extracts.

From Siraitia grosvenorii, a natural polysaccharide named SGP-1 was discovered, and its purity determined to be 96.83%. Its structure is glucan with 4-, 6- 4,6-linked glucose units. The derivatives were analyzed Fourier transform infrared spectroscopy (FT-IR), gel permeation chromatography (GPC), scanning electron microscopy (SEM). degree substitution (DS) 0.62, weight average molecular (Mw) 1.34 × 104 Da. Four polysaccharides (MCPa, MCPb, MCPc, MCPd) were obtained from Lepidium meyenii Walp. Their structures characterized by chemical and instrumental methods including total sugar, uronic acid protein content determination, UV, IR NMR spectroscopy, as well monosaccharide composition determination methylation analyses. a group of glucans with different molecular weights ranging 3.12 to 14.4 kDa, shared similar backbone chain consisting (1→4)-glucose linkages branches attached C-3 C-6. Furthermore, bioactivity assay showed that MCPs had concentration-dependent inhibitory activity on α-glucosidase. MCPb (Mw = 10.1 kDa) MCPc 5.62 moderate exhibited higher compared MCPa MCPd.
