Abstract The increasing production of Pomelo oranges and the need to diversify their use enhance economic value have prompted research into developing processed products from Pomelo’s outer peel. This study aims rank potential derived peel using Analytic Hierarchy Process (AHP). Data were collected by distributing questionnaires five experts, who conducted pairwise comparisons selected products. AHP method was applied these based on priority weights. results show that candy ranked first with a weight 0.35, followed snack (0.25), aromatherapy (0.20), scrubs (0.10), sauce (0.09). consistency expert evaluations validated through Consistency Ratio (CR), calculated at 0.059, indicating high level consistency. findings highlight as having highest for further development, consistent supporting its prioritisation product development Peel.
