In this research, physical and mechanical properties, as well color changes FT-IR analyzes of 13 different wheat varieties, which are intensively produced, were examined. For purpose, Altay, Harmankaya, Çetinel, Yunus, Mufitbey, Soyer 02, Dumlupınar, Bezostaja, Sönmez, ES-26, Reis, Karaman2000, Nacibey varieties used. As a result the research Soyer-02 variety exhibited largest seed width (3.42 mm) thickness (2.96 mm), while Müfitbey had smallest (2.72 (2.36 mm). Dumlupınar showed greatest length (7.82 with having shortest (6.07 Surface area was in (53.35 mm²) lowest (36.03 mm²). Arithmetic geometric mean diameters (4.61 mm 4.12 mm, respectively), showing (3.72 3.54 Sphericity ranged from 61.22% Reis to 52.67% Dumlupınar. The thousand-kernel weight varied significantly, recording highest (46.36 g) Altay (33.58 g). Fracture resistance Bezostaja (10.89 N 11.3 N), (5.89 N). The accurate identification of postharvest tomato freshness is critical for fruit growers to plan their storage, transportation, and wholesale processes. In this study, a method based on improved frequency-tuned (FT) visual saliency detection ResNet34 model proposed nondestructive freshness.
