Surface-enhanced Raman spectroscopy (SERS) technology has been revived and developed with the introduction of metal-organic frameworks (MOFs), while more valuable properties MOFs for SERS substrates remain largely unexplored. This work constructed a new substrate Fe3O4@UiO-66(Zr)@Ag nanoparticles (FUAs) excellent detection sensitivity, uniformity, reproducibility stability, exhibiting high enhancement factor (5.62 × 106), low limit (LOD, 2.11 10-11 M) RSD (12.41 %) 4-NBT, maintaining 81 % activity within 60 days. The FUAs took full advantage strong affinity UiO-66(Zr) organophosphorus pesticides (OPs) to realize trace OPs detection. LODs phoxim, triazophos methyl parathion in apple juice were 0.041, 0.021 0.0031 mg/L, respectively, good linearities ranging from 0.02 or 0.1-50 meeting requirements food control standards, indicating that potentials prospects detecting foods.

Process analysis is an important step for online food quality control during processing. Among the emerging non-destructive examination techniques that offer rapid detection, terahertz spectroscopy has attracted attention in analysing processes based on various parameters. Moreover, calibration and chemometric methods are frequently used spectral data analysis. The system normally consists of processing equipment time-domain imaging (THz-TDS), which often exhibits high prediction accuracy combined with appropriate chemometrics methods. Therefore, been considered highly suitable on-site in-situ process to enhance manufacturing thus improve product quality. In this review, applications THz-TDS dehydration, storage, freezing, fermentation, as well other areas, introduced discussed. these, technology intensive research related moisture changes, such dehydration storage under natural drying conditions. Emerging techniques, hot air (HAD) microwave vacuum (MVD), investigated. Applications including hygroscopic processes, were also reported. For freezing analysis, it mainly analyze (i) effect repeated thawing meat (ii) growth rate ice crystals. fermentation processing, although most confirmed feasibility THz-TDS, further investigation regarding still awaited. combination widely employed non-linear changes attributes emergence numerous recent years. It content polar substances hydrogen sulfide ammonia. Despite performance, drawbacks cost, interference from content, disturbance constituents protein significant obstacles universalization THz-TDS.

Food safety is directly relevant to human health and has drawn the intense attention of public. Surface-enhanced Raman scattering (SERS), as a rapid facile technology, been widely employed for food detection. SERS substrates, an important part this greatly influence performance. Currently, porous materials (PSM) nanohybridized with metal nanoparticles (MNPs) (PSM/MNPs) serving substrates have attracted great interest due their excellent merits in improvement sensitivity, specificity stability, posing potential in-situ detection contaminants complex matrixes. In review, types synthesis methods PSM available fabrication which include carbon (PC), silicon/silica (PS/PSiO2), metal-organic frameworks (MOFs), high polymer, semiconductor, cellulose other are introduced nanohybridization MNPs discussed. addition, recent applications PSM/MNPs enhancing areas such pesticide veterinary drug residues, illegal additives, foodborne bacteria, mycotoxin, spoilage markers heavy metals also presented, future challenges solutions finally detailed current review. Compared non-porous materials, porosity large surface specific area prevent from aggregation increase adsorption target analyte, leading stability sensitivity substrates. Moreover, adjustable pore sizes these enable selective absorption molecules, blocking interference big molecules. On hand, multiple structure enhances intensity, analytes.
