The chemical compound 2-acetyl-1-pyrroline (2-AP) is a major contributor to the fragrance of rice. This report presents first efforts towards determining quantities 2-AP in rice by grating-based visible–near-infrared reflectance spectroscopy using diverse set varieties. Calibration models generated preprocessing treatments Design Experiment (DoE) and 'one-variable-at-atime' (OVAT) methods were compared optimized. A modified partial least squares model with "2, 3, 1, 1"/ SNV 174 variables yielded coefficient determination for calibration values 0.978. results showed that DoE-based selection could efficiently accurately optimize models, advantages over OVAT. findings this study provide high-throughput screening technology high-precision quality breeding, monitoring control industry. method demonstrated here also has potential application many other disciplines, including identification plant fragrances cereal products.

Aroma is a key factor in milk powder quality evaluation and consumer choice. However, research has mostly focused on processing effects, with little flavor differences among powders. This study analysed identified the characteristics of five common types powders China, including yak powder, donkey camel goat cow using Headspace-Gas Chromatography-Ion Mobility Spectrometry (HS-GC-IMS), Headspace Solid-Phase Microextraction-Gas Chromatography-Mass (HS-SPME-GC-MS), multivariate statistical analysis. Results 55 86 volatile compounds via HS-GC-IMS HS-SPME-GC-MS, respectively, revealing significant between PCA, OPLS-DA, PLS-DA, heatmaps further distinguished sources. Rapid and accurate testing of wheat flour for illegal additives is important maintaining food safety. In this study, a combination NIR spectroscopy partial least squares regression (PLSR) was used to predict the levels two (talc powder benzoyl peroxide) in flour.
