The Aloe vera plant is an important source of bioactive compounds. Its growing conditions may have a considerable effect on both its physiological and chemical characteristics. Thus, the objective this study was to evaluate joint water salinity stresses (water + salinity) main compounds gel, colorless inner parenchymatous tissue (also known as leaf juice), their related functional properties. plants were treated with two levels available soil moisture (high low) five (0, 20, 40, 60 80 mM NaCl). Plants grown at high without salt concentration taken control (HASM-0). Total phenolic compounds, aloin, cell wall polysaccharides water-soluble polymers analyzed along antioxidant activity, radical scavenging, swelling, retention fat adsorption capacities. In general, stress negatively affected development process plants. However, it did cause increase in total amount dry matter, from 1.0 2.1 g/100 g fresh gel. This mainly due synthesis new polysaccharides, particular mannose-rich composed mannose, galactose glucose which increased 194.4 345.8 mg/g material increased. Further, there significant aloin content, 10.7 19.6 solid contents These changes reflected properties studied. Hydration such swelling capacity, exhibited higher values for those deficit salinity. determined by FRAP DPPH methods, also gel stressed Overall, these results show that could be agricultural strategy increasing not only content present but improving

Mill. phytochemical profile analysed with gas chromatography mass spectrometry (GC-MS). were screened using 1,1diphenyl2picrylhydrazyl (DPPH), 2,2'-azino-bis(3-ethylbenzthiazoline-6-sulfonic acid) (ABTS) micro-dilution assays, respectively. effects bacterial respiratory chain dehydrogenase, membrane integrity permeability iodonitrotetrazolium chloride, 260 absorbing materials relative electrical conductivity assays. GC-MS spectrum revealed 26 compounds N,N'-trimethyleneurea (10.56%), xanthine (8.57%) 4-hexyl-1-(7-ethoxycarbonylheptyl)bicyclo[4.4.0]deca-2,5,7-triene (7.10%), being major components. also exhibited activity median concentration (IC50) values 0.65 mg/mL DPPH 0.052 ABTS. minimum inhibitory (MIC) ranging from 0.07 1.13 mg/mL. inhibited growth by destructing permeability. Therefore, has potential serve as a source compounds.

Vacuum impregnation (VI) stands as a diffusion-driven food processing method that has found recent application within the industry, particularly for cold formulation of fortified products. Pulsed electric field (PEF) treatment can affect structure, influencing therefore mass transfer phenomena during further processing. Thus, study aimed at investigating effect PEF on selected physicochemical properties vacuum-impregnated apples. Apple slices were vacuum impregnated with aloe vera juice solution or different intensities (125, 212.5 300 V/cm). The was applied pretreatment-applied before VI process well posttreatment-applied after process. resulted in sample weight increase over 24% structural changes, partial cell viability loss and color alteration. In addition, decrease bioactive compounds observed, while antioxidant activity remained similar level raw material. adversely affected efficiency, causing microstructural changes loss. Additionally, chemical composition modifications evident through thermogravimetric analysis (TGA) Fourier Infrared Spectroscopy (FTIR) analyses. Tissue hardness decreased significantly due to damage caused high leakage from plant tissue, which hindering saturation reduced substance content observed did not restore apple samples juice.
