Increasing
interest
has
been
devoted
to
the
seeds
of
amaranth,
a
plant
that
garnered
attention
for
its
multifaceted
uses
in
daily
life.
In
this
research,
we
focused
on
four
genotypes
two
amaranth
species
cultivated
different
sites
southwest
France.
Oil
content,
fatty
acid
composition,
and
unsaponifiable
levels
were
carried
out.
The
lipid
composition
was
analyzed
using
Gas
Chromatography
with
Flame
Ionization
Detection
(GC-FID)
analysis.
total
polyphenol
contents
(TPC)
seed
extracts
measured
by
Folin–Ciocalteu
assay.
Antioxidants
cytotoxic
activities
additionally
assessed
methanol
(70%),
ethyl
acetate,
cyclohexane
extracts.
Results
showed
oil
content
varied
greatly
ranged
from
4.3
6.4%.
Lera
at
Riscle
had
highest
squalene
yield,
reaching
7.7%.
Linoleic
oleic
most
abundant
acids
sites,
followed
palmitic
acid.
Triglycerides
(TAGs)
main
glycerides
all
samples
growing
both
sites.
A
44
volatile
compounds
identified
Amaranthus
chemical
compositions
have
discussed
as
influenced
genetic
environmental
factors.
These
data
highlight
bioactive
potential
seed.
