Amyloid
nanofibrils
(ANFs)
are
supramolecular
polymers
originally
classified
as
pathological
markers
in
various
human
degenerative
diseases.
However,
recent
years,
ANFs
have
garnered
greater
interest
and
regarded
nature-based
sustainable
biomaterials
environmental
science,
material
engineering,
nanotechnology.
On
a
laboratory
scale,
can
be
produced
from
food
proteins
via
protein
unfolding,
misfolding,
hydrolysis.
Furthermore,
specific
structural
characteristics
such
high
aspect
ratio,

rigidity,
chemical
stability,
controllable
sequence.
These
properties
make
them
promising

research.
As

the
