The black tiger shrimp ( Penaeus monodon ) shell, a by‐product of processing, is valuable natural source oil and astaxanthin (AXT). However, extracting these from the shell difficult due to its tough cell walls. This study examined use deep eutectic systems (DESs) extract AXT shells. Three DESs (choline chloride/glycerol, choline chloride/citric acid, chloride/lactic acid) were tested, their extraction efficiencies compared with those traditional solvents (hexane, ethanol, acetone). Results indicated that efficiency was lower than solvents, but when ethanol added DES as co‐solvent, it significantly improved yield. Specifically, combining acid 45% resulted in highest concentrations (6.42/100 g) (39.10 μg/g), surpassing (5.12/100 g 31.56 μg/g) or hexane (5.62/100 33.47 acetone (4.46/100 28.59 μg/g). extracts rich polyunsaturated fatty acids (i.e., linoleic α‐linolenic EPA, DHA) potent antioxidant properties.
