Food waste remains a critical global concern, with approximately one third of all food produced being ultimately discarded. Therefore, it is urgent to develop new techniques for the effective repurpose waste. Aqueous two-phase systems (ATPSs) stand out as simple and biocompatible liquid–liquid extraction technique recovery bioactive substances from In ATPSs, target species partition between two liquid phases, according affinity, which facilitates its extraction. This work aimed at extracting three polyphenols—chlorogenic acid (CA), ferulic (FA), resveratrol (RV)—through application eco-friendly ATPSs composed water, ethyl lactate (EL), organic salts, namely disodium succinate (Na2Succinate) tartrate (Na2Tartrate), future in valorisation All partitions presented successful results, values coefficients (K) higher than 1 efficiencies (E) 50%, indicating preferential migration polyphenols top phase. The FA using ATPS based on Na2Tartrate most promising K = 19 ± 6 E (94.2 0.9)% longest tie-line. Additionally, comparison previous works research group was drawn, RV exhibiting outstanding performance across studied ATPSs. assessed were shown hold immense potential polyphenols.
