Novel protein source product formulations are becoming available globally to address nutritional and environmental needs. The aim of the study was develop a plant-based (PBP) spread as nutritious food that will be acceptable for South African communities. A farming community used baseline incorporate verifiable transparency part innovation since communities seeking products they can trust. Another important element traceability legumes varieties were locally sourced. Five diverse legume sources processed into palatable legume-based spreads (LSPDs 1-5). Standardised recipes formulated produce 250g mass in each case. nutrients analysed determine (Buchi app. Note no. 3xx001en), iron (inductively coupled plasma spectroscopy instrument), dietary fibre (AOAC 991.43) content per 100g significant differences among five varieties. Sensory evaluation recorded using 5-point hedonic scale preference range from 1 = dislike very much 5 like much. Variables appearance, aroma, texture, taste, flavour. Statistical analyses conducted one-way ANOVA rates across (SPD) variations. Each SPD had unique composition contributed its value level preference. SPD4 highest (8.5 g/100g) all SPDs. SPD1 SPD3 higher compared SPD2 SPD5. (13.1 g/100g), whilst relatively high (12.3 mg/kg). SPDs showed significance difference appearance (p=0.004), while 'like' also statistically different (p=0.001) Conclusion: As world transitions sustainable diets innovations focus on promoting proteins shift attitudes positively towards these diets.
