Veterinary drug residues in poultry and livestock products present persistent challenges to food safety, necessitating precise efficient detection methods. Surface-enhanced Raman scattering (SERS) has been identified as a powerful tool for veterinary residue analysis due its high sensitivity specificity. However, the development of reliable SERS substrates interpretation complex spectral data remain significant obstacles. This review summarizes process substrates, categorizing them into metal-based, rigid, flexible highlighting emerging trend multifunctional substrates. The diverse application scenarios requirements these are also discussed, with focus on their use detection. Furthermore, integration deep learning techniques SERS-based is explored, including substrate structure design optimization, optical property prediction, preprocessing, both qualitative quantitative analyses. Finally, key limitations briefly outlined, such selecting reporter molecules, imbalance, computational demands. Future trends directions improving proposed.
