In recent years the consumption of cereals and pulses have been subject to food nutrition trends as consumers become more aware benefits plant-based nutrition. Cereals are excellent sources many essential nutrients such proteins, dietary fibers, lipids, minerals, vitamins, well bioactive compounds like polyphenols GABA. However, nutritional value cereal may decrease by presence antinutritional factors trypsin inhibitors, oxalate phytic acid. Germination, which breaks seed dormancy activating endogenous enzymes, is identified most effective economical option boost qualities reduce activity antinutrients in pulses. Germination offers numerous health humans enhancing pulses, including antidiabetic, antihypertensive, anticancer activities. addition, germination enhances bioavailability bioaccessibility substances human gut improving digestibility complex molecules This review summarize how affects functional composition development foods. The also discusses bioavailability, bioaccessibility, digestion

In the current climate of food security, quality aspects legume crops have primary market economic and health impact. Legume proteins peptides been discovered to a role far beyond supplying amino acids for growth maintenance body tissues. Several (enzymatic inhibitors, lectins, storage globulins) derived from them (lunasin, hydrophobic peptides) shown anticarcinogenic, hypocholesterolemic, glucose-lowering, antioxidant, antimicrobial, immunostimulant properties. Further understanding how structural features affect in vivo digestion production bioactive sequences represents key step valorization nutraceutical potentiality them. this work, relationship between structure bioavailability protein are reviewed discussed.

The lentil (Lens culinaris L.) is one of the most important legumes (family, Fabaceae). It a natural functional food rich in many bioactive compounds, such as polyphenols, saponins and phytosterols. Several studies have demonstrated that consumption lentils potentially reducing incidence number chronic diseases, due to their compounds. common polyphenols include phenolic acids, flavan-3-ol, flavonols, anthocyanidins, proanthocyanidins or condensed tannins, anthocyanins, which play an role prevention several degenerative diseases humans, antioxidant activity. Furthermore, are reported antidiabetic, cardioprotective anticancer activities. Lentil triterpene glycosides, mainly soyasaponins I βg. These plasma cholesterol-lowering effect humans risk diseases. Moreover, high levels phytosterols been lentils, especially seed coat, β-sitosterol, campesterol, stigmasterol abundant. Beyond hypocholesterolemic effect, known for anti-inflammatory In this review, current information on nutritional composition, compounds including phytosterols, associated health-promoting effects discussed.

Abstract Legume crops are widely grown worldwide and a primary source of proteins across many least developed countries. These food inherently produced in environmentally sustainable manner also an economical plant‐based versus animal‐based proteins. The nutrient composition legumes is very rich, that is, high content protein, fiber, bioactive compounds relatively lower carbohydrates than cereal crops. Although staple more 70 countries mostly Asian, African, South American regions, the per capita consumption Western continues to be low spite legumes' demonstrated health benefits. However, emerging consumer trends preferences toward heathy foods, animal protein alternatives, environmental concerns can enhance legume‐based foods. functional attributes legume ingredients (e.g., thickening, water‐holding index, gelation, emulsification, foaming capacity) make suitable for replacing from other sources. development marketing use various value‐added applications have been increasing. pulse isolates concentrates expanding fast with substantial as meat extenders/replacers analogs, milk substitutes, gluten‐free applications. To increase utilization legumes, including it important focus on research efforts promote “easy‐to‐cook”/prepare foods consumers, who often avoid due long cooking times. Addressing this aspect convenience particularly critical busy lifestyles consumers potentially consumption.
