Today, food safety and quality are some of the main concerns consumer health agencies around world. Our current lifestyle market globalization have led to an increase in number people affected by poisoning. Foodborne illness poisoning different origins (bacteria, virus, parasites, mold, contaminants, etc.), cases can be traced back chemical natural toxins. One toxins targeted Food Drug Administration (FDA) European Safety Authority (EFSA) is biogenic amine histamine. Biogenic amines (BAs) constitute a potential public concern due their physiological toxicological effects. The consumption foods containing high concentrations has been associated with hazards.
