Beetroots
are
sources
of
bioactive
compounds
and
valued
pigments
such
as
betalains.
The
purpose
this
study
was
to
determine
the
influence
ultrasound
pretreatment
on
beetroot
infrared–hot
air
drying
process
functional
properties
obtained
