Cordyceps
militaris
solid
medium
polysaccharides
(CMMPs)
were
extracted
using
an
ultrasound-assisted
enzyme
method,

process
conditions
optimized
via
response
surface
methodology
(RSM).

CMMPs
separated
into
four
components
named
CMMP−1,
CMMP−2,
CMMP−3
CMMP−4

composition

properties
analyzed

molecular
weight
analysis,
Fourier-transform
infrared
spectroscopy
(FT–IR),
scanning
electron
microscopy
(SEM),

red

ultraviolet–visible
(UV-vis),
atomic
force
(AFM),
thermogravimetric
analysis
(TGA).
RSM
could
predict
yield
of
CMMP
(R2
=
0.9928),
polysaccharide
was
15.43%
under
selected
3.1%
cellulase
addition,
a
liquid–solid
ratio
42:1,
extraction
temperature
61
°C,
time
60
min.
Glucose
galactose
main
constituents
precipitated
polysaccharides.
Furthermore,
exhibited
antioxidant
activity,
CMMP−1
demonstrated
stronger
activity
in
vitro.
This
study
demonstrates
possibility
developing
natural
food
from
medium.
