Based on their geographical origins, the functional compound profile of beehive propolis varies significantly. The present study evaluates phenolic and flavonoid, antioxidant, antimicrobial activities extracts (PE) sourced from four different areas in UAE. Kuwaitat Al-Wathba were further used as an additive minced beef burger to demonstrate natural preservative effects enhance shelf life keeping quality over 15 days refrigerated storage. ethanol using DPPH assays with IC 50 0.30 ± 0.052 0.28 0.002 mg/mL, respectively, showed highest antioxidant activities. This study focuses on the extraction of betalain compounds from Opuntia stricta as a natural alternative to synthetic colorants and sustainable environmentally friendly technology solutions. Non-conventional technologies including microwave (MW) ultrasound (US) were used alone or in combination.
