Ethyl carbamate (EC), known as urethane, is a naturally occurring potentially carcinogenic metabolite that widely found in alcoholic beverages and other food-related fermented products. The concern related to the presence of EC its toxicity regularly consumed raises global interest assessing possible risks human health. mitigation approaches, such molecular imprinting technology (MIT), have been proposed target while preserving sensory quality beverages. This review explores principles MIT, advantages disadvantages most common polymerisation approach for molecularly imprinted polymer (MIP) synthesis, analytical techniques used MIP characterisation, strategies mitigate beverages, with studies reporting removal efficiencies up 84%. Additionally, it highlights novelty potential MIPs, offering practical insights into their integration within production highlighting scalability cost-effectiveness compared traditional strategies.
