ABSTRACT Chiral pesticides often undergo enantioselective degradation during food fermentation. In this study, the fates of seven chiral processing wine and rice were investigated. The results revealed that R ‐metalaxyl, ‐mefentrifluconazole S ‐hexaconazole preferentially degraded with EF values 0.57, 0.78, 0.43, respectively, whereas ‐metalaxyl 0.44 0.54, respectively. Stereoselectivity was attributed to fermentative bacterial activity. factor (PF) for five ranged from 0.04 0.34 0.02 0.29 processing, suggesting fermentation can mitigate pesticide exposure risks ensure safety. This study enhances our understanding fate fermented provides guidance application pesticides, enables dietary risk in processed products be assessed more accurately.
