Bu çalışmada Scarlet Spur elma çeşidinin kabuğu, posası ve yaprakları dondurularak kurutulmuş toz hale getirilmiştir. Toz örneklerin nem (%) renk analizleri yapılmıştır. Kurutulan tozlar etanol:su (42:58 v/v) karışımıyla klasik yöntemle ekstrakte edilmiştir. Elde edilen ekstraktlar meyve suyu arasında ABTS antioksidan aktivitesi (104,85 mg TE/g), DPPH serbest radikali indirme (9,96 TE/g) TFFM bakımından (84,72 ± 0,04 GAE/g) en yüksek değere sahip olan ekstraktın yaprağa ait olduğu belirlenmiştir. Kabuk, posa yapraktan elde ekstraktların Eschrichia coli ATCC 25922 (E. coli), Staphylococus aureus 25923 (S. aureus), Listeria monocytogenes 7644 (L. monocytogenes) patojenleri üzerine inhibisyon etkiye gözlemlenmiştir. 5 log KOB/ml konsantrasyona patojenler etkiyi alınan göstermiştir. Yaprağın TFMM zengin olmasının bu gösterdiği düşünülmektedir. çalışma ile, atığı olarak düşünülen dokularından patojen mikroorganizmalara karşı antimikrobiyal ajan doğal madde kullanılabileceğini göstermektedir.

Background: The gut–brain axis (GBA) is a complex bidirectional communication system that links the gastrointestinal tract and central nervous system. Essential oils (EOs) have emerged as promising natural compounds capable of modulating this axis. Methods: A comprehensive analysis recent literature was conducted, focusing on studies investigating effects EOs GBA. Particular attention given to endocannabinoid system, role cannabis-derived EOs, other plant-based with potential neuroprotective gut microbiota-modulating effects. Results: Among analyzed, cannabis essential oil (CEO) gained for its interaction cannabinoid receptors (CBR1 CBR2), motility, immune responses, neurotransmission. While acute administration CEO reduces inflammation permeability, chronic use has been associated alterations in microbiota composition, potentially impairing cognitive function. Other such those from rosemary, lavender, eucalyptus, oregano, demonstrated neurotransmitter modulation, balance, neuroinflammation, supporting their therapeutic applications GBA-related disorders. Conclusions: demonstrate GBA through mechanisms including regulation, anti-inflammatory activity. At same time, phytocannabinoids offer value; long-term warrants caution due impacts microbiota. Future research should aim identify EO-based interventions can synergistically restore homeostasis mitigate neurodegenerative

Hypertension has always posed a severe threat to people's health. Food-derived angiotensin-converting enzyme (ACE)-inhibitory peptides have the potential both prevent and treat hypertension. In current investigation, two ACE-inhibitory (SLPQ PYVRYL) from goat milk were studied for their endothelial effects using EA.hy926 cells. PYVRYL outperformed SLPQ, yet neither impacted cell survival below 200 μg/mL. Investigation of SLPQ's impact on expression revealed 114 differentially expressed genes, with 65 downregulated 49 upregulated. The genes enriched in cytokine interactions, coagulation cascades, Hippo signaling, ECM-receptor interaction. Decreased c-x-c motif chemokine ligand 2 (CXCL2), integrin subunit beta (ITGB2), fbj murine osteosarcoma viral oncogene homologue (FOS) increased secreted phosphoprotein 1 (SPP1) may protect cells inflammation. Our findings suggest that beyond ACE inhibition, SLPQ aids blood pressure control by influencing function, paving way its use as an antihypertensive food ingredient.

This study aimed to create Pickering emulsions with varying oil fractions and assess the impact of ultrasonic treatment on properties Whey Protein Isolates (WPIs). At 640 W for 30 min, ultrasound reduced WPI aggregate size, raised zeta potential, improved foaming, emulsifying, water-holding capacities. FTIR analysis showed structural changes, while fluorescence hydrophobicity increased, indicating tertiary structure alterations. suggests that sonication efficiently modifies functionality. Under ideal conditions, φ = 80 were most stable, no foaming or phase separation. Laser scanning revealed well-organized at 80. provides a reference modifying utilizing WPI.
