However, waste emerges as an excellent option pectin extraction, utilizing green extraction method, given that generates substantial peel, pomace, seeds. The environmental, health, economic concerns associated with underscore its potential valuable resource. Abstract Substantial lemon ( Citrus limon ) production in Indonesia generates an abundant amount of peel waste. Lemon peels, comprising 25–44% the total fruit mass, are typically discarded as a byproduct subsequent to pulp consumption. The valorization pectin content could mitigate waste accumulation. present study investigated best nitric acid solvent pH and number extraction stages for analyzed characteristics obtained from multistage extraction. Pectin was extracted via reflux methods at varying (0.5, 1.0, 1.5) employing sequential ranging one three. 1.0 yielded yield 29.24±0.15% two-stage Statistical analysis using t-test revealed no significant difference (p>0.05) between yields three-stage extractions. exhibited low methoxyl classified ester pectin. equivalent weight spanned 477.27±32.14 mg 1000 mg, while galacturonic ranged 29.92±2.49% 70.40%.
