Chlorogenic acids (CGAs) are esters formed between caffeic and quinic acids, represent an abundant group of plant polyphenols present in the human diet. CGAs have different subgroups that include caffeoylquinic, p-coumaroylquinic, feruloyquinic acids. Results epidemiological studies suggest consumption beverages such as coffee, tea, wine, herbal infusions, also some fruit juices is linked to reduced risks developing chronic diseases. These contain concentrations isomeric mixtures. The underlying mechanism(s) for specific health benefits attributed involves mitigating oxidative stress, hence related adverse effects associated with unbalanced intracellular redox state. There evidence show exhibit anti-inflammatory activities by modulating a number important metabolic pathways. This review will focus on three aspects relevance coffee beverages; namely: (1) relative composition CGA isomers (2) analysis vitro vivo individual can mitigate inflammatory stresses; (3) description molecular mechanisms key role cell signaling activity underlines functions.
