Monosodium glutamate: A hidden risk factor for obesity?

Summary Monosodium glutamate (MSG) has become one of the most widely used food additives in global supply. Although it been classified for decades as a ingredient that is generally recognized safe, concerns about health impacts chronic MSG use, especially its potential effect on weight, are still ongoing. This comprehensive review summarizes available human and animal evidence, highlighting mechanisms linking use to weight gain or obesity, discusses challenges future research directions. Because intake worldwide well hidden labeling, there pressing need mechanistic understanding weight. To generate robust scientific evidence clarify public concerns, rigorous studies randomized controlled clinical trials warranted.
