Propolis is a well-known resinous natural substance collected by honeybees (Apis mellifera L.) from plants exudations. Variations in chemical composition of propolis are due to different sources which it and change climate geographical location. Extra-virgin olive oil (EVOO) and virgin (VOO) are valuable natural products of great economic interest for their producing countries, therefore, it is necessary to establish methods capable proving the authenticity these oils on market. This work presents a methodology discrimination extra-virgin from other vegetable based targeted untargeted high-resolution mass spectrometry (HRMS) profiling phenolic triterpenic compounds coupled with multivariate statistical analysis data. Some (cinnamic acid, coumaric acids, apigenin, pinocembrin, hydroxytyrosol maslinic acid), secoiridoids (elenolic ligstroside oleocanthal) lignans (pinoresinol hydroxy acetoxy derivatives) could be biomarkers, whereby quantified in higher amounts EVOO compared oils.
