Rucheng Baimao (Camellia pubescens) is an excellent raw material for manufacturing white tea. Drying the last step in tea processing and essential tea's aroma. In this study, aroma sensory evaluation combined with volatile compound analysis reveals characteristic differences of oven drying (OD), air (AD), sun (SD) treatments.
