Food microbial contamination results in serious food safety issues and numerous loss waste, presenting one of the most significant challenges facing global system. Photodynamic inactivation (PDI) technology, which combines light photosensitizers (PS) to provide antimicrobial effects, is an ideal nonthermal technique for industry. This review provides a comprehensive overview PDI beginning with fundamental photoactivation principles PS pathways photoinduced reactive oxygen species (ROS) generation. critical factor affecting efficiency, categorized into three types: organic, metal oxide-, carbon-based. systemically summarizes photophysical properties, vitro performances, potential enhancement strategies, advantages limitations each type PS.
