Liquid smoke is a natural product made up of concentrate which used to impart smoky flavour without resorting the traditional smoking technique: it practical use, cheap, easy dose, able control presence undesirable substances and, above all, with reduced environmental impact, unlike systems. Technological advancements that enable countries to produce farmed seafood domestically, including land-based production, could potentially improve sustainability measures. However, whether consumers prefer domestic imported is unclear. This paper aims fill this gap by employing hypothetical choice experiments from the US, France, and Japan. We find that, in each country, there a sizable consumer segment (varying one-quarter two-thirds of market) with strong preference for salmon, those production.
