Beetroots are sources of bioactive compounds and valued pigments such as betalains. The purpose this study was to determine the influence ultrasound pretreatment on beetroot infrared–hot air drying process functional properties obtained product. In study, there were two used frequencies—21 35 kHz—and three different periods time—10, 20, 30 min. Since beetroots usually subjected thermal treatment, another aim examine blanching soaking tissue in order compare traditional ultrasound-treated methods. As a result it found that changed dry matter content, water activity, thickness tissue, total color difference, contents betanin beetroot. It revealed is shorter after using 21 kHz frequency. Drying exposed ultrasounds showed significant increase L* parameter; however, decrease a* parameter caused by reduced content betalain pigments. Taking into consideration parameters important from technological point view, best condition for 20 min regardless frequency used.

AbstractConsumers have an increasing demand for fruit and vegetables with high nutritional value worldwide. However, most are vulnerable to quality loss spoilage during processing, transportation, storage. Among the recently introduced emerging technologies, supercritical carbon dioxide (SCCO2) has been extensively utilized treat maintain mainly due its nontoxicity, safety, environmentally friendly. SCCO2 technology generates low processing costs mild conditions (temperature pressure) that allow application of CO2 at a state. This review aimed summarize current knowledge on influence attributes vegetable products, such as physicochemical properties (pH, color, cloud, particle size distribution, texture), sensory quality, composition (ascorbic acid, phenolic compounds, anthocyanins, carotenoids, betalains). In addition, effects mechanisms technique endogenous enzyme inactivation (polyphenol oxidase, peroxidase, pectin methylesterase) were also elucidated. Summary The research focused on the recovery of bioactive compounds from beetroot waste (fresh stalks) using an innovative and microwave‐mediated (mw) procedure that could allow simultaneous eutectic solvent preparation matrix extraction ( in situ mw NADES extraction), as a simplification more conventional (natural deep solvents) extractions. main goal was to propose fast simple “one‐pot” extractive approach obtain screen non‐toxic, ready‐to‐use ingredients, potentially useful food, cosmetic pharmaceutical fields, meanwhile converting residues, worn‐out plant matrices recycled sources with significant added values. With this purpose, several mixtures natural food‐grade hydrogen bond donors (choline chloride or betaine) acceptors (fructose, urea, citric acid, glycerol) were selected investigated (in opportune ratios) under microwave activation, considering time, temperature, solvent‐to‐matrix ratio influencing variables total phenols content response. By method developed, best results obtained within 5 min at 70 °C recoveries around 0.5 mg polyphenols for gram fresh stalks, assessed by Folin–Ciocalteu test. suitability NADES‐based extractives, radical scavenging agents, evaluated DPPH assay, which highlighted their good antioxidant activity; moreover, monitoring betacyanin means UV–vis spectrophotometric analyses, it evident provide relevant stability new complexes (up 3 months) compared water (24 h). process proposed be also preliminary screenings different organic matrices, simplifying workup, streamlining procedures, reducing costs.

Micronutrient deficiency is a serious problem in Russia. In this article, we developed complex of the essential microelement manganese with ascorbic acid and L-isoleucine. The properties resulting compound were studied by X-ray phase analysis, IR spectroscopy, computer quantum chemical modeling. It was established that has an amorphous structure. As result simulation, optimal interaction model determined: through carboxyl group α-amino L -isoleucine, C 2 3 atoms ( E = -2264.757 kcal/mol). Quantum modeling data confirmed spectroscopy. stability under various technological parameters (pH, temperature exposure time). To do this, multifactorial experiment carried out three input levels variation. been shown ternary amino -isoleucine significantly influenced all found increasing pH, time, ∆ Eh increases, which indicates loss its destruction. at samples observed correspond to lowest values : pH 3–7, t 25–60°, τ 5–15. At next stage, milk enriched rate 30% daily dose consumption physicochemical depending on concentration complex. for enrichment ascorbate isoleucinate it necessary use concentrations 0.005 mol/l or less, since obtained indicators quality standards Russian Federation. According organoleptic assessment, (smell taste) exceed control sample (JSC MKS, Stavropol, Russia) inorganic form iron — sulfate.

Sugar beet is one of the most important sugar crops in world. It contributes greatly to global production, but salt stress negatively affects crop yield. WD40 proteins play roles plant growth and response abiotic stresses through their involvement a variety biological processes, such as signal transduction, histone modification, ubiquitination, RNA processing. The protein family has been well-studied Arabidopsis thaliana, rice other plants, systematic analysis not reported. In this study, total 177 BvWD40 were identified from genome, evolutionary characteristics, structure, gene interaction network ontology systematically analyzed understand evolution function. Meanwhile, expression patterns BvWD40s under characterized, BvWD40-82 was hypothesized salt-tolerant candidate gene. Its function further characterized using molecular genetic methods. result showed that enhanced tolerance transgenic seedlings by increasing contents osmolytes antioxidant enzyme activities, maintaining intracellular ion homeostasis genes related SOS ABA pathways. laid foundation for mechanistic study stress, it may inform biotechnological applications improving resilience.
