Background: In recent years, the food service industry has undergone a significant transformation driven by shifting consumer preferences and rapid technological advancements. Notably, cloud kitchens or virtual restaurants have emerged as prominent development, focusing on preparation delivery, capitalizing online ordering app-based delivery services. Simultaneously, there been heightened awareness of healthier sustainable dietary choices. Millets, small-seeded cereal grains, gained attention due to their nutritional value, adaptability adverse environmental conditions, farming practices. This sparked interest in integrating millets into offer eco-friendly options. Objectives: The primary objectives this study were Assess feasibility scalability kitchen businesses that focus millet-based cuisine, identifying key challenges opportunities within emerging sector. Methodology: To achieve these objectives, mixed approach quantative qualitative -methods research design was employed. Data collected through telephonic interview questionnaire google form.Data analysed using software spss 23 basis Likert scale-based questionnaire. Results: findings indicate consistently positive perception dishes across various dimensions among customers, evidenced highly p-values (p < .001) mean differences ranging from 2.824 3.123. rejection null hypotheses implies factors influencing choices favor options, suggesting promising market for products. Key millet-driven identified which will be base upcoming cuisine. Conclusion: are intricately linked complex set factors, including sourcing challenges, engagement, regulatory compliance, operational efficiency, marketing. O interesse por uma alimentação saudável impulsiona a demanda alimentos e bebidas que ofereçam benefícios à saúde. Dentre esses alimentos, pode-se incluir o milheto pérola, vez seu potencial na humana é promissor. Torna-se necessário investigar como os diferentes métodos de processamento dos grãos milhetos podem interferir sua composição química valor biológico. Assim, objetivo deste estudo foi avaliar efeito processamentos aplicados no pérola (Pennisetum glaucum (L.) R. Br.) sobre qualidade proteica, saúde intestinal, controle glicêmico saciedade, in vivo. Foram realizados dois estudos. Para I, 32 ratos Wistar machos (21 dias idade) foram divididos em 4 grupos com 8 animais cada, sendo eles: caseína, aproteico, farinha não germinado germinado. deve duração 29 dias. analisadas proteica das farinhas milheto, assim as variáveis bioquímicas, murinométricas intestinal experimentais. II se tratou um clínico agudo, simples-cego, randomizado, controlado cruzado 14 adultos euglicêmicos eutróficos. Inicialmente, desenvolvidas, sensorialmente quimicamente base integral extrudado. Em seguida, realizado ensaio clínico, onde participantes passaram quatro sessões, durante quais consumiram seguintes opções: bebida extrudado, maltodextrina ou solução glicosada, esta última administrada duas sessões distintas. avaliadas respostas glicemia, insulina apetite período 2 horas, além determinar índice analisar ingestão alimentar nas 24 horas subsequentes cada sessão. As apresentaram perfil adequado aminoácidos essenciais, exceção da lisina. Ainda, capazes reduzir ganho peso, Lee pH fezes, bem melhorar razão líquida coeficiente eficiência níveis glicose plasmática, ácido úrico, colesterol triglicerídeos, aumentar espessura profundidade criptas do cólon, expressão PepT1 produção ácidos acético propiônico nos Wistar.
