An emerging drying method, far-infrared radiation heating-assisted pulsed vacuum (FIR-PVD), was employed to dry raspberries. In this study, the impacts of FIR-PVD, freeze (FD), and hot air (HAD) on characteristics quality attributes, including color, rehydration ratio, content total phenolics (TP), monomeric anthocyanins (TMA), antioxidant activity, microstructural attributes dried raspberries, were examined. Results indicated that FIR-PVD notably shortened time by 47.78% compared HAD 73.89% FD. The samples exhibited highest TP content, DPPH radical scavenging FRAP value, which 17.73%, 6.09%, 38.16% higher than those FD samples, respectively, 2.78%, 2.77%, 18.74% samples. Significant correlations (p < 0.05) observed between capacity, as measured assays, content. However, at a low temperature led TMA HAD. resulted in ΔE values products due lightness enhancement. addition, obtained had better capacity. These findings indicate presents promising alternative method for it enhances efficiency improves products.

Abstract Paper spray ionization (PSI‐MS) and tissue (TSI‐MS) mass spectrometry are simple rapid ambient techniques that offer numerous advantages over conventional analysis methods. This study aims to analyze the efficiency of detecting anthocyanins from Eugenia jambolana fruit peel Inga edulis seeds using PSI‐MS, TSI‐MS, DI‐MS (direct infusion). exhibited high efficiency, all compounds in abundance, with malvidin 3,5‐ O ‐diglucoside (1) petunidin (2) being most prevalent. however, struggled detect delphinidin 3‐ ‐glucoside showed lower abundances for 1, 2, 3 (delphinidin ‐diglucoside), 4 (petunidin ‐glucoside) compared DI‐MS, attributed technique's challenges molecular weight polarity. TSI‐MS was least effective, only at low intensities. The overall unique identified across were 134, emphasizing importance comprehensively employing multiple methods these edible plants.
