Alzheimer's

drying
method,
far-infrared
radiation
heating-assisted
pulsed
vacuum
(FIR-PVD),
was
employed
to
dry
raspberries.
In
this
study,
the
impacts
of
FIR-PVD,
freeze
(FD),
and
hot
air
(HAD)
on
characteristics
quality
attributes,
including
color,
rehydration
ratio,
content
total
phenolics
(TP),
monomeric
anthocyanins
(TMA),
antioxidant
activity,
microstructural
attributes
dried
raspberries,
were
examined.
Results
indicated
that
FIR-PVD
notably
shortened
time
by
47.78%
compared
HAD
73.89%
FD.
The
samples
exhibited
highest
TP
content,
DPPH
radical
scavenging
FRAP
value,
which
17.73%,
6.09%,
38.16%
higher
than
those
FD
samples,
respectively,
2.78%,
2.77%,
18.74%
samples.
Significant
correlations
(p
<
0.05)
observed
between
capacity,
as
measured
assays,
content.
However,
at
a
low
temperature
led
TMA
