Cold atmospheric plasma (CAP) acts as a powerful antibacterial tool in the food industry, effectively eliminating E. coli and wide range of pathogens, including bacteria, viruses, fungi, spores, biofilms meat vegetables. Unlike traditional bactericidal methods, CAP leverages an arsenal reactive species, oxygen species (ROS) such ozone (O3) hydroxyl radicals (OH•), nitrogen (RNS) like nitric oxide (NO•), alongside UV radiation charged particles. These agents synergistically dismantle coli’s cell membranes, proteins, DNA, achieving high degradation rates without thermal or chemical damage to processed food. This non-thermal, eco-friendly technology preserves food’s nutritional sensory integrity, offering transformative edge over conventional approaches. It emphasizes critical need optimize treatment parameters (exposure time, gas composition, power) unlock CAP’s full potential. review explores effectiveness degrading coli, emphasizing optimization for practical industry applications its potential scalable safety solution. is crucial conduct further studies enhance implementation, establishing fundamental element advanced processing technologies key measure protecting public health.
