Abstract Oats are a rich source of plant‐based proteins owing to their nutritional value, diverse functions, and high abundance. However, traditional methods for extracting oat (OPs), such as alkali solution acid precipitation (ASAP), can cause environmental pollution potentially protein denaturation. In this work, we studied the use deep eutectic solvents (DESs) system (DESys)‐based OP extraction. The DES composed ionic liquids (ILs) choline chloride (ChCl) hydrogen bond acceptors (HBAs), polyols donors (HBDs) By systematically investigating extraction conditions, it was found that using ChCl an HBA in DESys‐based method allowed significant increase recovery yield compared ASAP DES‐based methods. Furthermore, physicochemical properties OPs extracted ASAP, DES, exhibited some differences, particularly molecular structure, amino composition, thermal properties, suggesting could be adjusted by DESys‐ When considering both toxicity yield, is more suitable This study demonstrated green efficient minimizes impact, bridging gap between ILs offering insights designing new DES‐ or strategies biological molecules.
