Prickly pear consumption is increasing across the world due to its rich variety of nutrients and bioactive compounds. Yet, it a seasonal highly perishable fruit, application edible coatings emerges as an alternative extend shelf life. In this work, effects alginate, starch, chitosan, pectin on physicochemical, bioactive, microbiological, textural properties two prickly varieties (orange red), kept under refrigeration (5 ± 2 °C) were evaluated for 6 weeks. A lower weight loss (8-10%) fruits achieved applied, while control (without coating), 18-23%. Summary Food retail strategies to improve the healthiness of food and beverage options may increase purchasing healthier diets. This study evaluated the nutritional composition, techno-functional properties, and sensory acceptance of tortilla chips made from alternative flours derived local ingredients, including maize, beet, flaxseed, bean, chia.
