Prickly pear consumption is increasing across the world due to its rich variety of nutrients and bioactive compounds. Yet, it a seasonal highly perishable fruit, application edible coatings emerges as an alternative extend shelf life. In this work, effects alginate, starch, chitosan, pectin on physicochemical, bioactive, microbiological, textural properties two prickly varieties (orange red), kept under refrigeration (5 ± 2 °C) were evaluated for 6 weeks. Coatings proved be helpful in maintenance fruits' color properties, especially when was applied. Overall, starch chitosan can considered most effective preserving quality pears among options studied. A lower weight loss (8-10%) fruits achieved applied, while control (without coating), 18-23%. Starch also contributed bioactivity red showed good results preservation total phenolic content orange fruits. addition, presented best performance reduction microbial contamination (both yeasts molds mesophilic aerobic microorganisms). These findings highlight role pears, longer period, meeting consumers' demand fresh fruit.

Summary Food retail strategies to improve the healthiness of food and beverage options may increase purchasing healthier diets. Consumer demand for is an important determinant successful implementation maintenance healthy interventions. A systematic review peer‐reviewed literature was undertaken explore whether consumers are willing pay more foods determine key factors that influence willingness pay. Fifteen studies reported results 26 experiments providing estimates products across a range environments. Twenty three out included in this (88.5%) found would 5.6% 91.5% (mean 30.7%) price premium foods. Studies consistently positive with reduced fat wholegrains additional fruit vegetables, while salt or combination low sugar, showed mixed results. Adults over 60 years, females, those living obesity, who aim maintain lifestyle were likely food, whereas younger consumers, weight, higher levels education less prices. The contribute our understanding consumer preferences provide information retailers on surplus (benefits) associated provision alternatives.

The current study examines the impact of health claims on consumer preferences and willingness to pay (WTP) for functional snack bars, focusing anti-inflammatory antioxidant properties. Through an experimental auction involving 175 participants, this investigates how providing clear information product benefits influences interest WTP while analysing role individual consciousness (HC) in shaping these preferences. results indicate that detailed positively affect bars compared standard options. Although both attract interest, no significant difference was observed between two, suggesting similar perceived value distinct benefits. However, highly health-conscious consumers demonstrate a stronger preference options, indicating HC specific claim valuation. These findings underscore importance effective health-related messaging promoting foods suggest general may resonate more broadly with than specialised ones. This study's enhance knowledge foods, especially offering valuable insights manufacturers aiming implement targeted marketing strategies public initiatives focused healthier dietary choices.

This study evaluated the nutritional composition, techno-functional properties, and sensory acceptance of tortilla chips made from alternative flours derived local ingredients, including maize, beet, flaxseed, bean, chia. Three blends were assessed: maize with beans, chia-flaxseed. Significant differences (p < 0.05) observed in flours' moisture, ash, protein, lipid, mineral content. Flaxseed flour exhibited highest protein content (40.03 g/100 g), while chia was notable for its lipid (32.25 g) fiber (38.51 Bean rich iron zinc. Sensory evaluations, conducted 300 consumers Honduras, revealed general all blends, enriched chia-flaxseed showing preference (47.2%). Approximately 50% participants reported consuming weekly, prioritizing taste, freshness, price. Notably, over 40% expressed willingness to pay a premium more nutritious, baked options. These results underscore potential enhance diets foster healthier eating habits. Moreover, positive consumer response highlights significant market opportunity small medium-sized enterprises (SMEs), promoting awareness nutrition public health Honduras.

Abstract Supercritical carbon dioxide (SC‐CO 2 ) has emerged as a nonthermal technology to guarantee food safety. This review addresses the potential of SC‐CO in preservation, discussing microbial inactivation mechanisms and impact on products’ quality parameters bioactive compounds. Furthermore, main advantages gaps are denoted. application causes adequate reductions (>5 log cfu/mL) spoilage pathogenic microorganisms, enzyme inactivation, improvements storage stability fruit vegetable products (mainly juices), meat products, dairy derivatives. ‐treated maintain physicochemical, technological, sensory properties, compound concentrations, biological activity (antioxidant angiotensin‐converting enzyme–inhibitory activities) similar untreated products. The optimization processing (temperature, pressure, CO volume, times) is mandatory for achieving desired results. Further studies should consider expansion different matrices, shelf‐life evaluation, bioaccessibility compounds, vitro vivo prove benefits using technology. Moreover, characteristics and, mainly, consumer perception foods need be elucidated. We highlight opportunity postbiotic production. In conclusion, may used ensure safety without losing parameters.

Abstract This article explores the global commitment to achieving sustainable solutions for addressing hunger, emphasizing urgent need transform agricultural sector in face of escalating population growth and threats food system. Despite commitments reduce conventional pesticide use, market these products is expanding. Biopesticides are a alternative with targeted action ecological benefits. While biopesticide growing, it remains small segment within overall expanding market. The study focuses on Mediterranean region, specifically Spain, Tunisia, Turkey, investigate structural challenges hindering adoption biopesticides. Technical issues, coupled broader dynamics involving producers, farmers, regulators, consumers, contribute limited presence biopesticides region. Challenges such as knowledge gaps, constraints, manufacturing plants, registration complexities further impede development, confining them niche markets. Overcoming requires issues availability, affordability, efficacy, alongside legislative barriers. paper suggests potential roles regulators agents change, acknowledging complexity devising concrete strategies navigate current impasse. research proposes directions facilitating change.

Abstract In the context of healthy food consumption, this research aims to explore moderating role situational modes thinking for both 1) attraction effect (individuals tend choose options that are similar others but dominate inferior alternatives) and 2) compromise prefer intermediate over those with high‐ low‐end extremes). With experimental priming style (analytic vs. holistic), these effects were investigated by measuring French participants' purchase intention willingness pay poke bowls—a lower‐calorie, nutrient‐dense food. The results demonstrate induction has a differential impact on relative increase in consumers' preferences offering either dominant value specific attribute or an throughout available attributes. (compromise) was amplified analytic (holistic) style, leading consumers have higher dominating (intermediate) option bowls. This highlights shifts depending consumer holistic mode suggests effective global strategies facilitate target orientation toward lower‐calorie packaged foods.
