Abstract Modern diets are increasingly dominated by ultra‐processed foods, a shift driven urbanization and lifestyle changes. Among these, meat products (UPMPs) particularly popular due to their appealing flavor texture. However, emerging evidence highlights potential health risks associated with UPMPs. Although rich in high‐quality proteins, the processing methods used UPMPs can affect protein digestibility. Moderate techniques, such as sous‐vide cooking, fermentation, enzymatic tenderization, enhance digestion nutrient absorption, whereas excessive may lead aggregation cross‐linking, reducing Additionally, overuse of additives thermal key concerns UPMP production, leading formation potentially harmful substances, including acrylamide, heterocyclic amines, polycyclic aromatic hydrocarbons, advanced glycation end products. This review examines how different techniques influence digestibility UPMPs, elucidates pathways through which substances generated, assesses impact on gut health, focus microbiota colon. Background/objectives: recent studies have suggested that components typical of the Mediterranean diet (MedDiet) are associated with depression and anxiety prevention. In this sense, main objective study was to analyse associations between adherence MedDiet symptoms examine whether relationship is mediated by lean mass muscle strength index (MSI). Methods: a cross-sectional (based on data obtained from Nuts4Brain-Z study) conducted 2023–2024, involving 428 university students, aged 18–30 years, Spanish public university. Depression assessed using Beck Inventory (BDI-II), via General Anxiety Disorder-7 (GAD-7) tool. Adherence MEDAS questionnaire. Lean bioimpedance, MSI measured dynamometer. ANCOVA models were used test mean differences in scores categories (low < 9 points vs high ≥ points). Serial multiple mediation models, adjusted for confounders, explore role relationships symptoms. Results: students exhibited lower (p 0.05) than did low MedDiet. The analysis preliminarily revealed both acted as mediators anxiety. Conclusion:adherence per se does not appear direct effect because these partially (for depression) or entirely anxiety) explained MSI.

Importance Ultraprocessed foods (UPF), characterized as shelf-stable but nutritionally imbalanced foods, pose a public health crisis worldwide. In adults, UPF consumption is associated with increased obesity risk, findings among children are inconsistent. Objectives To examine the associations intake, anthropometric adiposity indicators, and status in Canadian children. Design, Setting, Participants CHILD Cohort Study, one of largest prospective, multicenter, population-based pregnancy cohorts Canada, diet was assessed during 3-year visit (September 2011 to June 2016), measurements were at 5-year (December 2013 April 2018). Data analysis performed between July 1, 2023, 30, 2024. Exposure Diet intake using semiquantitative food frequency questionnaire 3 years age. UPFs identified NOVA classification system. Results Among 2217 participants included this study, median outcome assessment 5.0 (IQR, 5.0-5.1) years, 1175 (53.0%) males.
