Grape pomace is a byproduct of wineries and sustainable source bioactive phenolic compounds. Encapsulation phenolics with well-chosen coating may be promising means delivering them to the intestine, where they can then absorbed exert their health-promoting properties, including antioxidant, anti-inflammatory, anticancer, cardioprotective, antimicrobial effects. Ionic gelation grape extract natural coatings (sodium alginate its combination maltodextrins, gelatin, chitosan, gums Tragacanth Arabic) was performed, resulting hydrogel microbeads were air-, vacuum-, freeze-dried prevent spoilage. Freeze-drying showed advantages in preserving geometrical parameters morphology compared other drying techniques. A good relationship found between physicochemical properties dried vitro release phenolics. Freeze-dried highest cumulative phenols intestinal phase (23.65-43.27 mgGAE/gMB), while most suitable dynamics observed for alginate-based gum Arabic, 1.5% (w/v) chitosan. The results highlight importance developing encapsulated formulations containing compounds that used various functional foods pharmaceutical products.
