Abstract Organic aquaculture aims to provide sustainable aquatic products, and utilizing innovative aquafeeds with less fish meal is crucial. This study evaluated the impact of a cost‐effective environmentally friendly diet (51% replacement plant/animal protein sources like fermented soy, pea, krill, squid, yeast meals) on gilthead seabream ( Sparus aurata ) growth, health, welfare using multiparametric approach (growth, swimming activity, blood indicators). The showed no adverse effects growth performance survival. Hematological biochemical indicators demonstrated minimal alterations, only lactate levels increasing, suggesting compromise in overall welfare. Immune features indicated potentially stronger innate immune response fed diet, as shown by higher total proteins, alpha 1, beta 1. Finally, slight difference was observed activity between diets, but primarily occurred at end day. A comprehensive analysis multi‐criteria decision better global health status compared control. While promising results for organic aquaculture, further long‐term investigations are necessary explore underlying causes parameter changes.
