Purpose In a reflection of individuals’ interest in maintaining healthy lifestyle, nutraceutical restaurants, which provide health benefits, have emerged on the market. However, little is known about underlying factors and mechanisms consumption foods. Therefore, grounded an extended cognitive–affective–conative model, this study examines role dining motivations restaurant attributes explaining integrated model that focuses customers’ loyalty formation process. Design/methodology/approach Data were collected from 893 Chinese customers who had recently dined at traditional medicine restaurants. When it comes to revitalizing rural areas and securing their population, food tourism can play a useful role. As such, there is need for an in-depth analysis of the characteristics market, in order better tailor tourists' demands. Accordingly, this paper centres on satisfaction as tool understanding these tourists ensuring offer appropriately oriented towards elements that influence satisfaction. To do so, takes subsector within niche market conducts survey tourists, yielding total 489 responses. A semi-qualitative model applied those responses, with sample divided into domestic international tourists. The results show relates comprehensive activities, while potential more flexible.
