Acanthopanax senticosus (Rupr. and Maxim.; AS) fruit, an underutilized byproduct, possesses significant bioactive potential, yet its quality is highly influenced by drying methods. This study systematically evaluated the effects of five techniques, including vacuum freeze-drying (VFD), (VD), microwave (MD), hot-air (HD), natural (ND), on color retention, composition, volatile profile, antioxidant activity AS fruit. VFD preserved highest levels total phenolic content (TPC) flavonoid (TFC), particularly chlorogenic acid, rutin, quercitrin, leading to superior activity. Amino acid analysis indicated that retained concentrations key essential amino acids, minimizing thermal degradation. Correlation revealed a strong association between TPC, TFC, activity, emphasizing their functional significance. Through multivariate statistical analysis, 12 compounds were identified as potential biomarkers distinguish fruit samples processed using different methods, highlighting metabolic differences techniques. Overall, emerged optimal method for preserving fruit's integrity, offering valuable insights post-harvest processing strategies in nutraceutical industry.

This research aimed to evaluate the impact of various herbal additions on quality and sensory attributes moringa (Moringa oleifera Lam)-based instant beverages. The study was conducted in several laboratories at Tadulako University Goods Quality Testing Certification Unit Palu. Physicochemical properties (water content, vitamin C, antioxidants, solution pH, dissolution time) were evaluated using a completely randomized design. At same time, such as color, aroma, taste examined block experiment tested six different additions: P0 (no herbs), P1 (red ginger), P2 (lemongrass), P3 (galangal), P4 (white turmeric), P5 (yellow with each treatment repeated three times. Results showed that yellow turmeric yielded best physicochemical outcomes, time 83 seconds, water content 5.27%, pH 6.36, C 12.44%, an antioxidant activity 49.25%. In contrast, red ginger emerged most preferred by panelists, scoring highest terms taste, values 3.50, 3.97, 3.60, respectively. findings indicate additives can enhance functional appeal drinks. Yellow effectively optimized traits, making beverage more suitable for health-conscious consumers. Meanwhile, improved appeal, increasing likelihood consumer acceptance. Future should optimize concentrations balance their effects qualities, investigate advanced drying techniques meet Indonesian National Standard 4320:1996 standards, explore bioavailability health impacts these products.
