Gastrointestinal (GI) cancers are the most common causes of global cancer burden and cancer-related deaths. Chronic inflammation is a hallmark feature GI tumors plays an important role in tumor initiation, progression, therapeutic response. Abstract This study aimed at studying phytochemical composition, nutritional properties and biological activities (antioxidant anti-inflammatory) of two potato varieties (sweet (SP): Ipomoea batatas L. conventional (CP): Solanum tuberosum L.) planted consumed in Morocco. For this, samples (SP CP) were firstly subjected to analysis, including water content, total reducing sugars, proteins, lipids, vitamin C, carotenoids, phenolic compounds flavonoids.
