This
paper
presents
a
study
on
integrated
and
waste-free
processing
of
various
invertebrate
species
such
as
molluscs
crabs.
The
main
focus
is
the
use
proteolytic
enzyme
preparation
‘Krusenzyme’,
isolated
from
crab
liver,
for
raw
materials.

that
Crusenzyme
was
effective
in
removing
skin
cephalopods,
softening
muscle
tissue
deproteinising
shell
enzymatic
treatment
improved
texture
products,
increased
yield
finished
products
reduced
energy
consumption
compared
to
traditional
methods.
