Abstract This study aimed at studying phytochemical composition, nutritional properties and biological activities (antioxidant anti-inflammatory) of two potato varieties (sweet (SP): Ipomoea batatas L. conventional (CP): Solanum tuberosum L.) planted consumed in Morocco. For this, samples (SP CP) were firstly subjected to analysis, including water content, total reducing sugars, proteins, lipids, vitamin C, carotenoids, phenolic compounds flavonoids. Secondly, extracts namely antioxidant invitro anti-inflammatory. Potato activity was tested by DPPH capacity (TAC) methods. Proteins lipids contents found much higher SP (5.21 ± 0.26 0.29 0.02 g/100g DW) respectively than CP (2.93 0.15 0.11 0.01 respectively. Besides, sugars 16.65 2.53 DW the CP, 12.47 2.13 SP, The different be those using TAC These findings could explained richness carotenoids (212 10.60 mg/100g DW), (130.11 6.51 mg GAE/100g flavonoids (85.03 4.2 5mg QE/100g C (471.33 23.57 DW). Exclusion chromatography done Sephadex G50 showed that polymeric more abundant when compared monomeric ones. difference consistent with anti-inflammatory assessed vitro.
